This Avocado Lime and Coconut Matcha Pudding is our new favourite at JENKI! Not only is it super tasty, but it's packed with goodness and health benefits from the matcha, the healthy fats and it has zero refined sugars!
- 1 ripe avocado Juice and zest of 1 lime
- 4g Matcha powder
- 3 tbsp maple syrup
- 220g silken tofu
- 1tbsp cashew or almond butter
- 1 teaspoon vanilla extract
- Plain coconut yogurt
- Lime twists, to garnish.
- Pop everything except for the coconut yogurt and the lime twists into a blender, blend until silky smooth.
- Then layer up in gorgeous glassware of your choice with coconut yogurt.
- Garnishing with a dusting of matcha and a lime twist if you want to be fancy!
