This white chocolate matcha mousse is giving us life! 

Not only is this mousse super high in protein but it’s got enough matcha to give you a good energy boost - plus the white chocolate is seriously heavenly.


Serves 6-8. 


  • 600g silken tofu
  • 90g white chocolate 
  • 6 tsp JENKI matcha 
  • 1/2 tsp vanilla paste
  • 1/8 tsp salt


  • Whipped cream
  • Shake of matcha
  • Flakey salt 



  1. Start by melting your white chocolate, we recommend using the ‘double boiler’ method instead of your microwave if possible! 
  2. While your chocolate is melting, put your tofu in a food processor or blender, and blend until very smooth. 
  3. Add your melted chocolate to your tofu and blend again until combined. 
  4. Add vanilla, salt, and matcha and blend until matcha is fully mixed in. 
  5. Your mousse mixture should be a gorgeous green and be ready to split into servings!
  6. Split into 4-6 servings and put in the fridge for a minimum of an hour. 
  7. Serve topped with some whipped cream, flaky sea salt and a dusting of matcha.
