Nothing says summer is here quite like an icy, refreshing, minty, matcha-y mojito, am I right?! So we just had to muddle one up for the fifth cocktail in our Matcha Mixology series.

We immediately decided to go for a strawberry mojito topped with some JENKI Matcha - and it was a team favourite. It comes together within a few minutes, and it would be great to make a large batch for your next BBQ!



  • 6 whole mint leaves
  • 4 strawberries, quartered
  • 40ml simple syrup 
  • 50ml light rum 
  • 20ml lime juice 
  • 70ml soda water
  • Half matcha shot (0.5 tsp of JENKI Matcha whisked in 15ml of warm water)
  • Ice
  • Garnish: one mint spring + one strawberry 


  1. Add mint and strawberries to a mixing glass. 
  2. Add your simple syrup and muddle.
  3. Add lime juice and rum. 
  4. Fill a tall glass with ice and pour in your fruity mixture. 
  5. Top with soda and your matcha shot. 
  6. Garnish with a mint sprig and a strawb - and enjoy! 

To make this mojito a mocktail, simply swap out the rum for your non-alc spirit of choice!
