MATCHA & BANANA WAFFLES

These moreish matcha waffles will keep you full for hours and give you a chill caffeine kick thanks to the addition of matcha. Easily one of our fave breakfasts ever, ever - and they come together in minutes!


RECIPE:

(Makes 6-8 mini waffles)

Waffle batter:

  • Half cup of flour
  • 3 tsp JENKI Matcha
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • Half a cup of oats (roughly blended)
  • 1.5 tbsp of coconut oil
  • 180ml milk of choice (we used oat)
  • 1 egg
  • 1/2 a ripe banana (mashed)
  • 1 tsp vanilla

Toppings:
  • Vanilla yogurt
  • Maple syrup
  • Berries
  • An extra shake of matcha powder

 

DIRECTIONS:

  1. Sift your flour, JENKI Matcha, salt, and baking powder into a large bowl.
  2. Then add your roughly blended oat in after (no need to sieve).
  3. Toss your dry ingredients with a whisk.
  4. In a separate bowl, melt your coconut oil and let it cool slightly before whisking in your milk, egg, mashed banana, and vanilla.
  5. Slowly add this mixture to your dry ingredients, whisking until smooth.
  6. Heat and grease your waffle maker, we used butter but coconut oil also works!
  7. Top with your favourite yoghurt, a shake of matcha powder, some fresh fruit, and a glug of maple syrup.
  8. Go about your day feeling happy, full, and perfectly caffeinated. Enjoy!
